  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper

Instructions

  1. Prepare your chicken: Begin by grilling or roasting the chicken until it’s delightfully charred and cooked through. Allow it to cool, then chop it into bite-sized pieces.
  2. Cook your corn: If using fresh corn, grill the ears until they develop charred marks for a smoky flavor. If using canned corn, simply drain and rinse it.
  3. Chop the vegetables: Dice the cucumber and finely chop the red onion. Gather them in your mixing bowl.
  4. Create the dressing: In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.
  5. Combine everything: Add the diced chicken and corn to the bowl of cucumber and onions. Pour the dressing over and gently fold all ingredients together until well coated.
