Description

A vibrant jelly that combines sweet crushed pineapple with the zesty heat of jalapeños, perfect for pairing with cheeses and grilled meats.


Ingredients

  • 2 cups crushed pineapple (fresh or canned)
  • 1 cup jalapeño peppers, finely chopped
  • 2 cups sugar
  • 1/2 cup apple cider vinegar
  • 1 packet fruit pectin (like Sure-Jell)
  • 1/4 teaspoon salt

Instructions

  1. Combine crushed pineapple, finely chopped jalapeños, sugar, and apple cider vinegar in a large pot and let sit for about 10 minutes.
  2. Bring the mixture to a boil over medium heat, stirring constantly until the sugar is fully dissolved.
  3. Add the fruit pectin and salt, and bring the mixture back to a rolling boil, cooking for 1 minute.
  4. Remove the pot from heat and skim off any foam if necessary.
  5. Pour the jelly into sterilized jars while still hot, sealing them tightly.
  6. Allow jars to cool to room temperature before transferring to the refrigerator to set properly.
