- 2 cups cooked chicken, shredded or sliced
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1 cup bell peppers, thinly sliced
- 1/2 cup carrots, shredded
- 1/2 cup cucumbers, thinly sliced
- 4 whole wheat tortillas or large lettuce leaves
- Optional toppings: fresh cilantro, lime wedges, chopped peanuts
Instructions
- Cook the chicken in a preheated skillet until golden and cooked through, then let rest and slice into strips.
- In a mixing bowl, combine peanut butter, soy sauce, lime juice, and honey. Mix until creamy.
- Dice bell peppers, carrots, and cucumbers into thin slices.
- Lay the tortilla or lettuce leaf flat on a surface.
- Place sliced chicken and veggies in the center of the wrap.
- Drizzle peanut sauce over the fillings.
- Fold the sides of the wrap inwards and roll tightly from the bottom up. Secure with a toothpick if necessary.
- Slice the wrap in half and serve with extra peanut sauce on the side.
Notes
Make the chicken and peanut sauce ahead of time for faster assembly. Customize with additional proteins or spices if desired.
