Description

Delicious and crispy vegetarian fritters made with zucchini and carrots, perfect for any occasion.


Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/2 cup chopped onion
  • 1 cup breadcrumbs
  • 1/2 cup grated cheese (optional)
  • 2 eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prepare the vegetables: In a large bowl, combine the grated zucchini, grated carrots, chopped onion, and breadcrumbs. If you’re adding cheese, now’s the time!
  2. Combine the wet mixture: In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, and pepper until fully blended.
  3. Mix everything together: Pour the egg mixture into the vegetable mixture and stir with enthusiasm until everything is well incorporated.
  4. Heat the pan: Heat a generous amount of oil in a frying pan over medium heat.
  5. Scoop and flatten: Using a spoon or a small ice cream scoop, take spoonfuls of the mixture and gently place them in the pan. Flatten them slightly.
  6. Fry until golden: Fry each fritter for about 3-4 minutes on each side, or until they turn a beautiful golden-brown color.
