- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, whisk together the flour, baking soda, and salt until well combined.
- In a separate large bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until fully integrated.
- Gradually add the flour mixture to the creamed butter, mixing until just combined.
- Stir in the shredded coconut and white chocolate chips until evenly distributed.
- Using a cookie scoop or spoon, drop generous spoonfuls of dough onto a lined baking sheet.
- Bake in your preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For chewier cookies, don’t overbake and consider using more brown sugar. You can substitute coconut oil for butter for a richer coconut flavor.
