Description

Deliciously soft and chewy cookies featuring the delightful combination of creamy white chocolate and tropical coconut.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, whisk together the flour, baking soda, and salt until well combined.
  3. In a separate large bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Beat in the egg and vanilla extract until fully integrated.
  5. Gradually add the flour mixture to the creamed butter, mixing until just combined.
  6. Stir in the shredded coconut and white chocolate chips until evenly distributed.
  7. Using a cookie scoop or spoon, drop generous spoonfuls of dough onto a lined baking sheet.
  8. Bake in your preheated oven for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, don’t overbake and consider using more brown sugar. You can substitute coconut oil for butter for a richer coconut flavor.
