Description

A delightful Whole30 Marry Me Chicken recipe that combines tender chicken with a creamy coconut sauce, sun-dried tomatoes, and aromatic garlic, perfect for romantic dinners or gatherings.


Ingredients

  • 2 tablespoons olive oil (or avocado oil)
  • 1.5 pounds boneless skinless chicken breast (cut into 1″ cubes)
  • 2 teaspoons garlic salt (or salt, divided)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh minced garlic
  • 1 13.66 ounce can full-fat unsweetened canned coconut cream (chilled; solid part only)
  • 1 cup chicken broth
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried oregano
  • 12 tablespoons arrowroot or potato starch
  • 1 8-ounce jar sun-dried tomatoes (drained, blotted dry, and chopped)
  • 0.5 ounces fresh basil (Optional but recommended)

Instructions

  1. Heat the oil in a large skillet over medium.
  2. Add the cubed chicken, sprinkle with 1 teaspoon of salt and 1/2 teaspoon black pepper, and sear for about 5-7 minutes.
  3. Introduce the minced garlic in the last minute of cooking.
  4. Prepare the sauce by whisking together chicken broth, nutritional yeast, dried oregano, the remaining teaspoon of salt, and 1 tablespoon of starch in a medium mixing bowl.
  5. Chop the sun-dried tomatoes and set aside.
  6. Combine the cooked chicken with sun-dried tomatoes and mix in the chilled coconut cream until melted.
  7. Thicken the sauce with the chicken broth mixture, bringing everything to a gentle boil and simmering for about 5 minutes.
  8. Serve alongside steamed veggies or over cauliflower rice.
